Today was my day off. It started off a bit rocky as I was awoken from a deep slumber by scary thumping noises above me. It seems that my landlords thought it'd be a sweet idea to get up on my roof at 8 am and do some fucking jumping jacks or perhaps it was straight up aerobics. I was a bit peeved by the ruckus as last night I was out late, but then I realized that it was 9/11 today and all of that began to seem very insignificant. After some reflecting and a phone call to the boyfran, I decided to make an effort to make my day exceptionally relaxing, because I honestly don't allow myself to relax very often. I made myself a nice comforting breakfast of oatmeal with soy milk, berries, flax oil and local organic honey, and drank a cup of chamomile and lemongrass tea.
I went on a really long bike ride, stopped by my favorite mom and pops hardware store in Winter Park, Millers Hardware, to grab some lavender and rosemary seeds to plant in my garden. From there, I biked over to Palmano's, a cute little Italian coffee shop on Park Ave and sat on their porch and drank my coconut mocha and read this week's New Yorker. I started thinking about how incredibly Manhattan's bounced back in the past few years, and sat in disbelief for a good ten minutes at the fact that I haven't been back to the city since March, 2007 - YIKES. I then visited my good friend Wendy at my favorite store, Origins, for some hugs and giggles!
Then my teenage boy-esque hunger kicked in when I got home. I was inspired by a Vegan Yum Yum recipe I saw a few days ago to buy the Light Life tempeh Fakin' Bacon and make a salad with it for dinner tonight. The only part of the recipe I really followed was the dressing, which was by far the best creamy dressing I've ever had! It was SO simple too - just a base of veganaise with a little dijon mustard, agave, lemon juice, salt and pepper. To check out the full recipe, go here.
I sliced and cooked up the fakin' bacon, put it over a bed of arugula, then drizzled the dressing over the top. I also made a side of fresh sauteed summer squash, zucchini and yellow tomato with fresh thyme, olive oil, lemon, and garlic to go along with it. Mmmmm :)
Now, a glass of pinot grigio and finally watching Let The Right One In. Good day!
